We had a party last night, and as we were finishing up the salad, two blog followers urged me to put the recipe on the blog. I had to hurry up and take a picture before we ate the last bit. Sorry there wasn’t much left!
Asian Salad with Rice Noodles
Greens (lettuce, field greens, spring greens, etc.)
Julienned vegetables (carrots, jicama, celery, blanched snow peas, cucumber, radish, anything you like–just slice with a mandolin or by hand to make thin strips)
Rice noodles (Heat in water till soft, then separate and cool) I use one big section of rice noodles for a good size salad
Microgreens or sprouts if you have them
Sesame seeds
Toss all the vegetables together, add noodles. Dress with a sesame dressing. (YOu can find many recipes on line. I made mine with a mix of sesame and vegetable oil, soy sauce, crushed ginger and garlic, rice wine vinegar, a little mirin).
That’s all there is too it. You can add just about anything, except frisée. I personally don’t think anyone should eat that!
